Ingredients

Here’s what you’ll need

  • 1.5 lbs boneless, skinless chicken thighs and/or breasts

  • 1 tablespoon olive oil or avocado oil

  • Salt and pepper

  • G-Mom’s BBQ Sauce – choose Mild, Medium, or Hot

Step 1: Prep the Chicken

Start by patting the chicken dry. This helps with browning and keeps it from steaming on the grill.

Spread the chicken out on a cookie sheet and drizzle the oil on each piece. Flip the chicken and repeat. Use a brush, or your hands, to rub the oil in. Each piece of chicken should be generously coated in oil. Sprinkle the salt and pepper over each piece. Let it sit at room temp for 15–20 minutes, this small step helps it cook more evenly.

Step 2: Set Up the Grill

It always helps to start with a clean grill. It doesn’t need to be sparkling but take a minute to burn off old grease and give it a good brush before adding your chicken to the grill rack. This is also a good time to grab a spray bottle of water to keep on hand while grilling.

Set your grill to medium heat. For boneless cuts, you can cook directly over the flame, just be mindful of flare-ups, thus the water bottle. 

If using gas, preheat one side to medium and keep the other side lower, in case you need to shift things around. For charcoal, spread an even layer of coals and keep a cooler spot off to one side.

Step 3: Grill Time

For boneless thighs:

  • Grill for 4–5 minutes per side

  • Internal temperature should reach 165°F

For boneless breasts:

  • Flatten thicker portions slightly for even cooking

  • Grill for 5–6 minutes per side

  • Target 165°F inside

Turn the chicken only once or twice to keep it juicy. If the grill flares up or pieces start to brown too fast, move them to the cooler part of the grill.

Step 4: Sauce and Finish

Once the chicken is nearly done, brush on G-Mom’s BBQ Sauce—generously but not too thick.

Step 5: Rest and Serve

Once the chicken’s cooked and sauced, take it off the grill and let it rest for 5 minutes. This gives the juices time to settle and keeps each bite tender.
